A simple egg fried rice in 5 easy steps. An essential side to your fakeaway!
The first addition to my new 'side dish' series, I love a simple egg fried rice as it's so versatile! You can add absolutely anything to it - meat, seafood, veggies, tofu you name it. This recipe is just a staple for you to add whatever you fancy to it. It goes perfectly with my Sticky Teriyaki Chicken recipe or also my Sriracha Salmon!

Ingredients (Serves 2)
150g Basmati rice
1 Large egg
1 Garlic clove (minced)
1 tbsp Vegetable oil
1 Handful peas
1 tbsp Soy sauce
1 tbsp Sesame oil
Method
1. Add the rice to boiling salted water and cook as per pack instructions (or you can use a microwave pouch if you prefer). In the final few minutes of cooking the rice add the peas to the pan.
2. In a mug whisk the egg and add salt & pepper. Add the veg oil to a large frying pan, once hot add the garlic and fry until fragrant but don't let it brown.
3. Add the rice and peas to the pan and mix to combine. Push the rice to one side of the pan and add the egg to the other side.
4. Don't mix the egg, allow to cook like an omelette and then flip. Now break up with a spoon into pieces and mix into the rice.
5. Add the soy sauce and sesame and mix to combine. Taste and add more soy sauce if you like. Serve and enjoy!
