Chocolate Orange & Toasted Hazelnut Biscuits

Looking for an easy biscuit recipe that doesn't require any baking? Look no further than these chocolate orange biscuits, these biscuits are so rich and chocolatey! These are my idea of chocolate heaven.


Total Cooking Time

2 Hours 20 Minutes


Ingredients (Makes 20)

For the biscuit base;

100g Digestive biscuits

60g Unsalted butter


For the chocolate topping;

60g Unsalted butter

60ml Semi-skimmed milk

40g Cocoa powder

310g Icing sugar

60g Dark chocolate orange (roughly chopped)

60g Hazelnuts (toasted & roughly chopped)

1 Orange (zest only)


Method

1. Pre-heat the oven to 200 degrees (fan) and line a 7 inch baking tin with cling film.

2. Using a rolling pin or food processor crush the digestive biscuits to a crumb. Melt the butter and add to the biscuits until combined.

3. Spoon the biscuit into the base of the tin and press down until level, put in the fridge to set.

4. While the base sets, put the hazelnuts onto a baking tray and bake at 200 degrees for 5 minutes.

5. Remove the hazelnuts from the oven and transfer to a metal sieve, shake to remove them from their skins.

6. Roughly chop the hazelnuts and leave to one side.

7. Now start the chocolate mix by melting the butter in a pan. Add the milk, cocoa powder & icing sugar and whisk until smooth.

8. Remove from the heat and add the chocolate stirring until melted and finally add the roughly chopped hazelnuts.

9. Spoon the chocolate mix onto the biscuit base before it sets and top with the zest of the orange.

10. Chill in the fridge for 2 hours to completely set and then divide into 20 small squares.
