Pumpkin Spiced Apple Muffins

Soft muffins filled with pumpkin spiced apples and a crunchy oat topping.


The perfect Autumnal bake! I love this pumpkin spice seasoning from M&S, all the amazing Autumn flavours in one easy seasoning. I'll be using it in literally everything. These muffins have become my favourite morning snack. I hope you enjoy the recipe :)

Total Cooking Time

35 Minutes


Ingredients

100g Baking spread

200g Light brown sugar

2 Medium eggs (whisked)

2 tbsp Natural yoghurt

60ml Milk

275g Self raising flour

2 x Medium apples (I used braeburn)

1/2 tsp Pumpkin spice seasoning

1/2 tsp Self raising flour


Topping

1/4 tsp Pumpkin spice seasoning

40g Jumbo oats

2 tbsp Pumpkin seeds

1 . 5 tbsp Light brown sugar

1 tbsp butter (melted)


Method

1. Pre heat the oven to 160 (fan).

2. Cream the butter and sugar with a mixer or electric whisk until light and creamy. Gradually add the whisked egg in small amounts and whisk after each addition. Dont worry if it starts to curdle.

3. Now add the milk and yoghurt and hand mix until combined.

4. Sift in the self raising flour and whisk until just mixed through.

5, Peel and cut the apples into small chunks and add to a mixing bowl. Add 1/2 tsp pumpkin spice seasoning and 1/2 tsp self raising flour and combine.

6. Now add the apples to the muffin mix and mix by hand until combined.

7. Line a muffin tray with cases and fill 3/4 full.

8. To make the topping mix the oats, pumpkin seeds, pumpkin spice and sugar in a bowl. Add the melted butter and combine.

9. Spoon the topping onto the muffins and bake for 25 minutes until they are golden and baked through.
