A perfect tomato sauce for any pasta dish made with fresh vine tomatoes and herbs.
I trialled this sauce last week and at first it seemed like far too much sauce and I was going to cut the quantities by half but then I had a crazy busy week and I have never been so thankful to have that sauce in the fridge to throw together quick pasta dishes for dinner! It was also great as a pizza sauce too. You can also freeze this sauce, so handy to have for those days you simply can't face cooking and want something quick and easy.

Ingredients
1500g Large vine tomatoes (quartered)
7 Cloves garlic (left whole)
2 Large shallots (halved)
2 Ramiro peppers (halved)
1 Handful thyme
1 Handful Rosemary
Extra virgin olive oil
Salt & pepper
Method
1. Pre heat the oven to 180 (fan). Place all the vegetables into a large roasting tray, drizzle with extra virgin olive oil and season with plenty salt & pepper. Roast the vegetables for 40-45 minutes.
2. Remove the herbs from the dish and put the rest into a large food processor or if you don't one big enough place into a pan and use a hand blender. Blend the vegetables until you have a perfectly smooth tomato sauce and enjoy!
