A warming bowl of soup, made with store cupboard ingredients and fresh vegetables! What's not to love? Minestrone is my go to soup, as often with soup I don't feel satisfied but with the pasta I don't have this issue.
I have used orzo in this recipe because I feel its easier to eat than using spaghetti but you can use any pasta you have in the cupboard! Fusilli or farfalle would also work great with this recipe. The same goes with the vegetables, use whatever you have in stock! The great thing about this budget friendly soup is that I always have the staple ingredients in the cupboard. If you like you can even use frozen vegetables!

Ingredients (Serves 4)
1 400g Tin tomatoes
1 400g Tin butter beans (drained)
150g Orzo
1.5 litre Vegetable stock
2 tbsp Tomato puree
2 Medium carrots (chopped)
1 White onion (chopped)
2 Garlic cloves (minced)
3 Celery stalks (chopped)
1/2 Sweetheart cabbage (finely sliced)
25g Pecorino or parmesan
Method
1. Heat olive oil in a large pan and saute the garlic, onion, carrot & celery for 5 minutes.
2. Add the vegetable stock, tinned tomatoes and tomato puree to the pan. Bring to a low simmer, cover with a lid and leave for 10 minutes.
3. Now add the orzo and the drained butter beans and cook for a further 10 minutes. In the final 2 minutes add the cabbage and season to taste. Serve with pecorino on top and enjoy!
