All my favourite Mediterranean flavours in a delicious orzo dish perfect for lunches!
A lot of you asked for lunch ideas so this is my first lunch recipe! Easy to make in a large batch and keep in containers in the fridge for a few days of lunches. It's also easily adapted to be made vegetarian or vegan!

Ingredients (serves 3-4)
200g Orzo
1 Courgette (sliced)
1 Yellow pepper (sliced)
1 Red pepper (sliced)
1 Red onion (quartered)
2 Handfuls cherry tomatoes (left whole)
1 tsp Oregano
100g Chorizo (sliced)
1 Handful rocket
Method
1. Pre-heat the oven to 180 (fan).
2. Prepare all the vegetables and chorizo and add to a large roasting dish. Drizzle with olive oil, add the oregano, season with salt and pepper and mix together in the tray.
3. Roast in the oven for 35-40 minutes until all vegetables are soft.
4. In the final 10 minutes of the vegetables roasting add the orzo to salted boiling water and cook per pack instructions.
5. Once the orzo is cooked drain the water and coat with a drizzle of olive oil. Now add the roasted veg and chorizo to the orzo and mix well.
6. Leave to cool completely and divide into containers for the fridge. Once cool add the feta cubes to the orzo and serve with rocket.
