Lemon Sole & Chorizo Traybake

A delicious combination of lemon sole & smoky chorizo, served with roasted vegetables and baby potatoes. All roasted in one dish, so minimal cleaning up. Who doesn't love a one pan recipe!


Total Cooking Time

40 Minutes


Ingredients (Serves 2)

2 tbsp Olive oil

1 tsp Oregano

1 Handful vine tomatoes

1 Red onion (quartered)

1 Lemon (quartered)

8 Baby potatoes

4 Garlic cloves (skins left on and bashed)

100g Chorizo (sliced)

2 Lemon sole fillets (I buy these)


Method

1. Pre heat the oven to 180 degrees (fan).

2. Parboil the baby potatoes in salted boiling water for 5 minutes, drain and transfer to a large roasting tray.

3. Add the chorizo, tomatoes, garlic, onion and oregano to the tray, drizzle with olive oil and shake to coat with the oregano and roast for 15 minutes.

4. After 15 minutes shake the vegetables and potatoes around in the chorizo oil. Top with the lemon wedges and lemon sole fillets and roast for a further 15 minutes. Serve with the chopped parsley.
