Creamy Roasted Garlic & Chicken Tagliatelle

Caramelised oozy garlic in a creamy tagliatelle dish with lots of parmesan!


Garlic lovers this is a recipe for you! A whole bulb of roasted garlic goes into this dish and I love it. A really easy recipe for the perfect comforting pasta dish. This one is perfect for a Saturday night when your craving a special pasta. You could of course make this veggie and leave out the chicken, it's entirely up to you! I know that 40 minutes cooking time sounds long but this is for roasting the garlic - actual cooking time is around 20 minutes. Let me know if you try the recipe :)

Ingredients (Serves 2)

1 Whole garlic bulb

150g Tagliatelle (fresh)

2 x Chicken breasts (skinless & boneless)

2 tbsp Olive oil

1 Sprig fresh thyme

2 tbsp Butter

1 Shallot

150ml Chicken stock

100ml Double cream

2 tbsp Parmesan

Squeeze lemon juice


Method

1. Pre heat the oven to 180 (fan) and cut off the top of the garlic bulb. Place on tin foil, pour over a little olive oil and season with salt. Wrap the garlic bulb in the foil, place on a baking tray and bake for 40 minutes until caramelised.

2. In the last 20 minutes of the garlic roasting make a start to the pasta. Wrap the chicken in cling film and using a rolling pin flatten slightly, so it cooks through quicker. Add olive oil to a large frying pan (large enough to hold the sauce too), season the chicken breasts with salt & pepper and add to the pan along with the thyme.

3. Add the butter half way through cooking and coat the chicken. When the chicken is cooked through and is browned on both sides remove from the pan (keep the thyme in), set aside and keep warm.

4. In the same frying pan add the shallot and season with pepper. When the shallot has softened, remove the thyme and add the chicken stock. Bring to a boil and add the cream, now reduce to a simmer to thicken the sauce.

5. When your garlic is roasted, squeeze out into a bowl and mash with a fork. Now add the parmesan and mix together to make a paste. Add the paste to the sauce and let it melt down along with a squeeze of lemon juice.

6. Fresh pasta only takes 2-3 minutes to cook so add your pasta into salted boiling water and cook as per pack instructions. When the pasta is cooked, no need to drain just add straight to the sauce. Mix the pasta well to coat in the sauce, adding a little more pasta water if required.

7. Serve with black pepper, more parmesan, slice the chicken breasts to top the pasta and enjoy!
